For the Stuffed Mushrooms:

  • 12 large white or cremini mushrooms (stems removed)
  • 1/4 cup cream cheese (softened)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped (or 1 tsp dried parsley)
  • 1/2 teaspoon dried thyme (or Italian seasoning)
  • Salt and pepper to taste
  • Olive oil spray (for air fryer basket)

Instructions

Prepare the Mushrooms

  1. Remove the Stems: Gently remove the stems from the mushrooms and set the caps aside. Finely chop the stems for the filling, discarding the tough ends.
  2. Make the Filling: In a bowl, combine cream cheese, Parmesan, mozzarella, minced garlic, chopped mushroom stems, parsley, thyme, salt, and pepper. Stir until smooth and well mixed.

Stuff the Mushrooms

  1. Fill the Caps: Spoon the cheese mixture into the mushroom caps, packing it down gently to ensure each mushroom is filled generously.

Air Fry the Mushrooms

  1. Preheat the Air Fryer: Preheat the air fryer to 375°F (190°C).
  2. Arrange the Mushrooms: Spray the air fryer basket with olive oil spray, then place the stuffed mushrooms in a single layer, making sure they’re not crowded.
  3. Cook: Air fry the mushrooms for 12-15 minutes, or until the tops are golden brown and the mushrooms are tender.
