For the Shrimp Skewers:
- 1 lb large shrimp, peeled and deveined (about 20–24 shrimp)
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 tablespoon garlic powder
- 1 tablespoon paprika
- 1 teaspoon cayenne pepper (optional, for extra heat)
- 2–3 skewers (wooden or metal)
For the Buffalo Sauce:
- 1/2 cup hot sauce (such as Frank’s RedHot)
- 1/4 cup unsalted butter
- 1 tablespoon white vinegar
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon garlic powder
- Pinch of salt
- Pinch of black pepper
Instructions
Prepare the Shrimp
- Season the Shrimp: In a bowl, toss the shrimp with olive oil, salt, pepper, garlic powder, paprika, and cayenne pepper if using. Ensure the shrimp are well coated with the spices.
- Skewer the Shrimp: Thread the seasoned shrimp onto skewers, piercing through the thick part of the shrimp. You can fit about 4-5 shrimp on each skewer, depending on their size. If using wooden skewers, soak them in water for about 10 minutes beforehand to prevent them from burning.
Make the Buffalo Sauce
- Melt the Butter: In a small saucepan over medium heat, melt the butter. Once melted, stir in the hot sauce, vinegar, Worcestershire sauce, garlic powder, salt, and pepper. Whisk together until everything is combined and heated through. Taste and adjust the seasoning, adding more hot sauce or vinegar if you like it spicier or tangier.
Grill the Shrimp
- Preheat the Grill: Heat your grill or grill pan to medium-high heat. If using a grill, lightly oil the grill grates to prevent the shrimp from sticking.
- Cook the Shrimp: Place the shrimp skewers on the grill and cook for 2-3 minutes per side, until the shrimp are pink and opaque. Be careful not to overcook them!
Toss with Sauce
- Coat the Shrimp: Once the shrimp are cooked, brush or drizzle the buffalo sauce over them while they’re still on the skewers, or serve the sauce on the side for dipping.
- Serve: Remove the shrimp from the skewers and arrange them on a serving platter. Garnish with chopped parsley or green onions if desired.
