For the Noodles:

  • 1 medium butternut squash
  • 2 tablespoons olive oil
  • Salt and pepper to taste

For the Sauce:

  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh basil or parsley for garnish

Instructions

Prepare the Noodles

  1. Spiralize the Squash: Cut the ends off the butternut squash, peel it, and spiralize it into noodles using a spiralizer or vegetable peeler. Set aside.
  2. Heat the Oil: In a large skillet, heat the olive oil over medium heat.

Cook the Noodles

  1. Sauté the Noodles: Add the butternut squash noodles to the skillet. Season with salt and pepper. Sauté for about 5-7 minutes, stirring occasionally, until they are tender but still al dente.
  2. Add Garlic and Tomatoes: Stir in the garlic and cherry tomatoes. If you like a little heat, add red pepper flakes. Cook for an additional 3-5 minutes until the tomatoes are soft.
