For the Noodles:
- 1 medium butternut squash
- 2 tablespoons olive oil
- Salt and pepper to taste
For the Sauce:
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- 1/4 cup grated Parmesan cheese (optional)
- Fresh basil or parsley for garnish
Instructions
Prepare the Noodles
- Spiralize the Squash: Cut the ends off the butternut squash, peel it, and spiralize it into noodles using a spiralizer or vegetable peeler. Set aside.
- Heat the Oil: In a large skillet, heat the olive oil over medium heat.
Cook the Noodles
- Sauté the Noodles: Add the butternut squash noodles to the skillet. Season with salt and pepper. Sauté for about 5-7 minutes, stirring occasionally, until they are tender but still al dente.
- Add Garlic and Tomatoes: Stir in the garlic and cherry tomatoes. If you like a little heat, add red pepper flakes. Cook for an additional 3-5 minutes until the tomatoes are soft.
