For the Bake:
- 3 boneless, skinless chicken breasts, cooked and chopped into bite-sized pieces
- 4 cups fresh broccoli florets
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 can cream of chicken soup (or mushroom for a twist)
- 1/2 cup sour cream
- 1/2 cup milk
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
- 1 cup crushed Ritz crackers (for topping)
Instructions
Prepare the Ingredients
- Cook the Chicken: Begin by cooking your chicken. You can grill, bake, or sauté it until it’s cooked through. Once done, chop the chicken into bite-sized pieces.
- Steam the Broccoli: While the chicken is cooking, steam the broccoli florets until they’re bright green and tender, but still crisp. You can also blanch them in boiling water for a few minutes.
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish to prepare it for the bake.
Make the Sauce
- Combine the Wet Ingredients: In a large mixing bowl, combine the cream of chicken soup, sour cream, and milk. Stir until smooth and well combined.
- Add the Seasonings: To the sauce mixture, add the garlic powder, onion powder, salt, and pepper. Taste and adjust seasoning as needed.
Assemble the Bake
- Layer the Chicken and Broccoli: In the prepared baking dish, spread the steamed broccoli evenly across the bottom. Top with the cooked chicken pieces, making sure everything is spread out.
- Pour the Sauce: Pour the creamy sauce mixture evenly over the chicken and broccoli. Use a spatula to spread it out to cover everything.
- Add the Cheese: Sprinkle the shredded cheddar and grated Parmesan cheese over the top of the sauce. This will create a melty, cheesy topping as it bakes.
Add the Crunchy Topping
- Top with Ritz Crackers: Crush the Ritz crackers and sprinkle them evenly over the top of the cheese. This will create a buttery, crispy topping once baked.
Bake the Dish
- Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the casserole is bubbling. The cheese should be melted and the sauce hot and creamy.
