For the Stir Fry:
- 2 chicken breasts, thinly sliced
- 2 packs of ramen noodles (discard the seasoning packet)
- 1 tablespoon vegetable oil
- 1 medium carrot, julienned
- 1 bell pepper, thinly sliced
- 1 small zucchini, thinly sliced
- 1/2 cup green onions, chopped
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
For the Sauce:
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/2 teaspoon chili flakes (optional for heat)
Instructions
Prepare the Chicken and Vegetables
- Slice the Chicken: Thinly slice the chicken breasts against the grain into bite-sized strips.
- Prepare the Vegetables: Julienne the carrot, slice the bell pepper and zucchini, and chop the green onions. Mince the garlic and grate the ginger.
Cook the Ramen Noodles
- Boil the Noodles: Bring a pot of water to a boil and cook the ramen noodles according to the package instructions (usually 3-4 minutes).
- Drain and Set Aside: Drain the noodles, rinse under cold water to stop the cooking, and set them aside.
Cook the Chicken and Veggies
- Heat the Oil: In a large pan or wok, heat the vegetable oil over medium-high heat.
- Cook the Chicken: Add the chicken to the pan and cook for 5-7 minutes, until golden brown and cooked through. Remove from the pan and set aside.
- Stir Fry the Veggies: In the same pan, add a bit more oil if needed. Stir-fry the carrots, bell pepper, zucchini, garlic, and ginger for about 3-4 minutes, until they start to soften but still have some crunch.
Prepare the Sauce and Combine
- Mix the Sauce: In a small bowl, whisk together the soy sauce, oyster sauce, hoisin sauce, rice vinegar, sesame oil, and chili flakes (if using).
- Combine Everything: Return the cooked chicken to the pan with the vegetables. Add the cooked ramen noodles and pour the sauce over everything. Toss well to combine, ensuring everything is coated in the sauce.
- Cook Together: Let everything cook together for another 2-3 minutes, allowing the flavors to meld.
