For the Enchiladas:
- 6 large corn or flour tortillas
- 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
- 1 cup red chile sauce
- 1 cup green chile sauce
- 1 small onion, finely chopped
- 1/2 teaspoon cumin
- Fresh cilantro, for garnish
Instructions
Prepare the Filling
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Prepare Filling: In a bowl, mix the shredded cheese, chopped onion, and cumin until well combined.
Assemble the Enchiladas
- Fill Tortillas: Place a portion of the cheese mixture in the center of each tortilla. Roll up each tortilla tightly and place seam-side down in a baking dish.
- Add Sauces: Pour green chile sauce over half of the enchiladas and red chile sauce over the other half to create the “Christmas” look.
Bake
- Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes or until cheese is bubbly and enchiladas are heated through.
- Garnish and Serve: Remove from the oven and sprinkle with fresh cilantro before serving.
