Christmas Chile Cheese Enchiladas

For the Enchiladas:

  • 6 large corn or flour tortillas
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 cup red chile sauce
  • 1 cup green chile sauce
  • 1 small onion, finely chopped
  • 1/2 teaspoon cumin
  • Fresh cilantro, for garnish


Instructions

Prepare the Filling

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Filling: In a bowl, mix the shredded cheese, chopped onion, and cumin until well combined.

Assemble the Enchiladas

  1. Fill Tortillas: Place a portion of the cheese mixture in the center of each tortilla. Roll up each tortilla tightly and place seam-side down in a baking dish.
  2. Add Sauces: Pour green chile sauce over half of the enchiladas and red chile sauce over the other half to create the “Christmas” look.

Bake

  1. Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes or until cheese is bubbly and enchiladas are heated through.
  2. Garnish and Serve: Remove from the oven and sprinkle with fresh cilantro before serving.
