Cranberry Salad

For the Salad:

  • 2 cups fresh cranberries (or frozen, thawed)
  • 2 medium apples, diced (preferably Granny Smith or Honeycrisp)
  • 1 cup chopped celery
  • 1/2 cup walnuts or pecans, chopped (optional)
  • 1/2 cup mini marshmallows (optional)

For the Dressing:

  • 1/2 cup plain yogurt (or sour cream)
  • 1/4 cup honey or maple syrup
  • Zest of 1 orange
  • Juice of 1 orange

Instructions

Prepare the Salad

  1. Rinse the Cranberries: If using fresh cranberries, rinse them under cold water and remove any soft or damaged ones.
  2. Chop the Ingredients: Dice the apples, chop the celery, and, if using, chop the walnuts or pecans.
  3. Mix the Salad: In a large mixing bowl, combine the cranberries, diced apples, chopped celery, walnuts or pecans (if using), and mini marshmallows (if desired).

Make the Dressing

  1. Combine Dressing Ingredients: In a small bowl, mix together the yogurt, honey (or maple syrup), orange zest, and orange juice until well combined.
  2. Add Dressing to Salad: Pour the dressing over the salad mixture and toss gently to coat all the ingredients evenly.
