For the Salad:
- 2 cups fresh cranberries (or frozen, thawed)
- 2 medium apples, diced (preferably Granny Smith or Honeycrisp)
- 1 cup chopped celery
- 1/2 cup walnuts or pecans, chopped (optional)
- 1/2 cup mini marshmallows (optional)
For the Dressing:
- 1/2 cup plain yogurt (or sour cream)
- 1/4 cup honey or maple syrup
- Zest of 1 orange
- Juice of 1 orange
Instructions
Prepare the Salad
- Rinse the Cranberries: If using fresh cranberries, rinse them under cold water and remove any soft or damaged ones.
- Chop the Ingredients: Dice the apples, chop the celery, and, if using, chop the walnuts or pecans.
- Mix the Salad: In a large mixing bowl, combine the cranberries, diced apples, chopped celery, walnuts or pecans (if using), and mini marshmallows (if desired).
Make the Dressing
- Combine Dressing Ingredients: In a small bowl, mix together the yogurt, honey (or maple syrup), orange zest, and orange juice until well combined.
- Add Dressing to Salad: Pour the dressing over the salad mixture and toss gently to coat all the ingredients evenly.
