For the Pasta:

  • 12 oz (340g) pasta (spaghetti or linguine work best)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon ssamjang (Korean fermented soybean paste)
  • 1 tablespoon gochujang (Korean chili paste, optional for more spice)
  • 1/2 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • Salt and pepper to taste

For Garnish (Optional):

  • Fresh cilantro or parsley, chopped
  • Sesame seeds
  • Red chili flakes (for extra spice)
  • Fried eggs (optional topping)

Instructions

Cook the Pasta

  1. Boil the Pasta: In a large pot of salted boiling water, cook the pasta according to the package instructions until al dente. Drain the pasta, reserving about 1/2 cup of pasta water for later.
  2. Set Aside: Once drained, set the pasta aside, but keep it warm.

Make the Creamy Ssamjang Sauce

  1. Heat the Olive Oil: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, or until fragrant and golden brown.
  2. Add the Ssamjang: Stir in the ssamjang and gochujang (if using), and cook for 1-2 minutes to allow the flavors to meld together.
  3. Add the Cream: Pour in the heavy cream, stirring to combine. Let the mixture simmer for 3-4 minutes, allowing the sauce to thicken slightly.
  4. Add Parmesan: Stir in the grated parmesan cheese and season with salt and pepper to taste. If the sauce is too thick, you can add some reserved pasta water to reach your desired consistency.

Combine Pasta and Sauce

  1. Toss the Pasta: Add the cooked pasta to the skillet, tossing to coat the noodles in the creamy sauce. Let it cook for another 1-2 minutes, allowing the pasta to absorb some of the sauce.
  2. Adjust Seasoning: Taste the pasta and adjust the seasoning if necessary, adding more salt, pepper, or gochujang for extra heat.

Serve and Garnish

  1. Plate the Pasta: Serve the pasta in bowls and garnish with fresh cilantro or parsley, sesame seeds, and red chili flakes. You can even top with a fried egg for added richness and flavor.
