For the Chicken:
- 1 lb boneless, skinless chicken breasts (or thighs if you prefer)
- 1 cup panko breadcrumbs
- 1/2 cup all-purpose flour
- 2 large eggs
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp paprika
- Salt and pepper, to taste
- Olive oil spray or a little oil for baking
For the Bang Bang Sauce:
- 1/4 cup mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp sriracha (adjust for more or less heat)
- 1 tsp honey
- 1 tsp rice vinegar (optional for a bit of tang)
- Pinch of salt
Instructions
Step 1: Prepare the Chicken
- Preheat your oven to 400°F (200°C).
- Cut your chicken into bite-sized strips or pieces. This makes it easier to coat and ensures an even crisp.
- Set up your breading station: in one shallow dish, combine the panko breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper. In a second shallow dish, beat the eggs.
Step 2: Coat the Chicken
- Dredge each piece of chicken first in the flour, then dip it into the beaten eggs, and finally coat it in the breadcrumb mixture. Press gently to ensure the breadcrumbs stick.
- Lay the coated chicken pieces on a baking sheet lined with parchment paper or lightly greased.
Step 3: Bake the Chicken
- Lightly spray the chicken with olive oil spray to help it crisp up.
- Bake in the preheated oven for 18-20 minutes, flipping halfway through, until the chicken is golden brown and crispy on the outside and cooked through inside.
Step 4: Make the Bang Bang Sauce
- While the chicken is baking, whisk together the mayonnaise, sweet chili sauce, sriracha, honey, rice vinegar (if using), and a pinch of salt in a bowl. Taste and adjust the spice or sweetness to your preference.
Step 5: Coat the Chicken in Sauce
- Once the chicken is cooked and crispy, place the chicken in a large bowl. Pour the Bang Bang sauce over the chicken and toss gently to coat each piece evenly.
Step 6: Serve and Enjoy
- Serve your Crispy Bang Bang Chicken with a side of rice, fresh veggies, or even in a wrap. Garnish with chopped green onions, cilantro, or sesame seeds if desired.
