For the Quesadillas:
- 4 small flour tortillas (you can also use corn tortillas for a gluten-free version)
- 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
- 1 tablespoon butter (for crisping the tortillas)
- Optional: salsa, sour cream, or guacamole for dipping
Instructions
Prepare the Tortillas
- Heat Your Pan: Place a non-stick skillet or griddle over medium heat. Let it warm up for about 1 minute.
- Butter the Tortillas: Spread a thin layer of butter on one side of each tortilla. You’ll need about 1 tablespoon of butter in total for all tortillas.
- Place the Tortillas in the Pan: Lay one buttered tortilla in the hot pan, buttered side down. You can cook multiple tortillas at once depending on the size of your pan.
- Add the Cheese: Immediately sprinkle a generous amount of shredded cheese evenly over the tortilla. Add more cheese if you want extra gooey quesadillas.
Cook and Flip the Tortillas
- Cook Until Crispy: Cook for about 2-3 minutes, until the bottom tortilla is golden and crispy, and the cheese is beginning to melt.
- Flip the Tortilla: Carefully flip the tortilla over using a spatula, pressing it slightly to ensure an even crisp. Cook for another 2-3 minutes, until the second side is crispy and the cheese is fully melted.
- Remove and Repeat: Remove the quesadilla from the pan and set it aside. Repeat the process with the remaining tortillas.
Cut the Quesadillas into Mini Pieces
- Slice into Triangles: Once the quesadillas are cooked, place them on a cutting board. Use a sharp knife or pizza cutter to slice them into 4-6 small triangles for bite-sized pieces.
- Serve Immediately: Arrange the mini quesadillas on a serving platter and enjoy while they’re hot and crispy!
