For the Chili:
- 1 lb ground beef (or ground turkey for a lighter option)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes (with juice)
- 1 can (6 oz) tomato paste
- 2 cups beef broth (or vegetable broth for a vegetarian version)
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon ground oregano
- 1/2 teaspoon ground cayenne pepper (optional for heat)
- Salt and pepper to taste
- 1 tablespoon olive oil (for cooking)
Toppings (Optional but Highly Recommended):
- Shredded cheddar cheese
- Sour cream or Greek yogurt
- Chopped green onions
- Jalapeño slices
- Tortilla chips or cornbread for serving
Instructions
Step 1: Cook the Meat
- Heat Oil: In a large pot or Dutch oven, heat the olive oil over medium-high heat.
- Brown the Meat: Add the ground beef (or turkey) and cook until browned, breaking it apart with a spoon as it cooks. This should take about 5-7 minutes.
- Drain Excess Fat: If using beef, drain any excess fat from the meat once it’s browned.
Step 2: Add the Aromatics
- Sauté the Onions and Garlic: To the same pot, add the diced onion and sauté for about 3 minutes, or until softened and translucent.
- Add the Garlic: Stir in the minced garlic and cook for an additional 1 minute, allowing it to become fragrant.
Step 3: Add the Beans and Tomatoes
- Add Canned Ingredients: Stir in the kidney beans, black beans, diced tomatoes (with their juice), and tomato paste. Mix well to combine all the ingredients.
- Pour in the Broth: Add the beef broth (or vegetable broth for a lighter version) to the pot, stirring to blend all the flavors together.
Step 4: Season the Chili
- Add Spices: Sprinkle in the chili powder, cumin, paprika, oregano, cayenne pepper (if using), and salt and pepper to taste. Stir everything together and bring the chili to a simmer.
- Simmer: Reduce the heat to low and let the chili simmer for 20-30 minutes, stirring occasionally. The flavors will meld together, and the chili will thicken slightly.
Step 5: Taste and Adjust
- Taste Test: After simmering, taste the chili and adjust the seasoning as needed. If you prefer a spicier chili, feel free to add more cayenne pepper or chili powder.
- Consistency: If the chili is too thick for your liking, you can add more broth or water to achieve your desired consistency.
