For the Sweet Potatoes:
- 4 medium sweet potatoes
- 4 tablespoons unsalted butter, melted
- 3 cloves garlic, minced
- 1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)
- 1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried thyme)
- Salt and pepper, to taste
Instructions
Prepare the Sweet Potatoes
- Preheat Oven: Preheat your oven to 425°F (220°C).
- Slice the Sweet Potatoes: Carefully slice the sweet potatoes thinly, about 1/4 inch apart, making sure not to cut all the way through (stop about 1/4 inch from the bottom).
- Arrange on a Baking Sheet: Place the sliced sweet potatoes on a baking sheet lined with parchment paper for easy cleanup.
Prepare the Garlic Herb Butter
- Mix the Butter: In a small bowl, combine the melted butter, minced garlic, chopped rosemary, thyme, salt, and pepper.
- Brush the Mixture: Generously brush the garlic herb butter mixture over the sweet potatoes, making sure to get some in between the slices.
Roast the Sweet Potatoes
- Roast in the Oven: Place the baking sheet in the preheated oven and roast the sweet potatoes for 45 minutes, or until they are tender and the edges are crispy.
- Baste Occasionally: Halfway through cooking, baste the sweet potatoes with the remaining butter mixture for extra flavor and moisture.
- Prep Time: 15 min.
