Hasselback Sweet Potatoes

For the Sweet Potatoes:

  • 4 medium sweet potatoes
  • 4 tablespoons unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)
  • 1 teaspoon fresh thyme, chopped (or 1/2 teaspoon dried thyme)
  • Salt and pepper, to taste

Instructions

Prepare the Sweet Potatoes

  1. Preheat Oven: Preheat your oven to 425°F (220°C).
  2. Slice the Sweet Potatoes: Carefully slice the sweet potatoes thinly, about 1/4 inch apart, making sure not to cut all the way through (stop about 1/4 inch from the bottom).
  3. Arrange on a Baking Sheet: Place the sliced sweet potatoes on a baking sheet lined with parchment paper for easy cleanup.

Prepare the Garlic Herb Butter

  1. Mix the Butter: In a small bowl, combine the melted butter, minced garlic, chopped rosemary, thyme, salt, and pepper.
  2. Brush the Mixture: Generously brush the garlic herb butter mixture over the sweet potatoes, making sure to get some in between the slices.

Roast the Sweet Potatoes

  1. Roast in the Oven: Place the baking sheet in the preheated oven and roast the sweet potatoes for 45 minutes, or until they are tender and the edges are crispy.
  2. Baste Occasionally: Halfway through cooking, baste the sweet potatoes with the remaining butter mixture for extra flavor and moisture.
