  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 cup warm water (110°F/45°C)
  • 1/4 cup olive oil
  • 1/4 cup fresh herbs (such as rosemary, thyme, or parsley), chopped

Instructions

Prepare the Dough

  1. Activate Yeast: In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.
  2. Mix Dry Ingredients: In a large mixing bowl, whisk together the flour and salt.
  3. Combine Ingredients: Add the yeast mixture and olive oil to the flour mixture. Stir until a dough begins to form.
  4. Add Herbs: Fold in the chopped fresh herbs until evenly distributed.
  5. Knead the Dough: Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.
  6. First Rise: Place the dough in a lightly greased bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Rolls

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Punch Down Dough: Once the dough has risen, punch it down to release air.
  3. Divide the Dough: Cut the dough into 12 equal pieces and shape each piece into a ball.
  4. Second Rise: Place the rolls on a greased baking sheet, cover them with a cloth, and let them rise for another 30 minutes.

Bake the Rolls

  1. Bake: Bake the rolls in the preheated oven for 20-25 minutes, or until golden brown.
  2. Cool: Remove from the oven and allow the rolls to cool on a wire rack.
