For the Collard Greens:

  • 1 large bunch of collard greens (washed and chopped)
  • 1 onion (diced)
  • 2 cloves garlic (minced)
  • 4 cups vegetable or chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

For Extra Flavor (Optional):

  • 23 slices of bacon or ham hock (for a smoky flavor)
  • 1 tablespoon apple cider vinegar (for added tang)

Instructions

Prepare the Ingredients

  1. Chop the Greens: Remove the tough stems from the collard greens and chop them into bite-sized pieces.
  2. Prep the Aromatics: Dice the onion and mince the garlic.

Sauté the Aromatics

  1. Sauté in Instant Pot: Set the Instant Pot to “Sauté” mode. Add olive oil and let it heat up.
  2. Add Onion and Garlic: Once hot, add the diced onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

Pressure Cook the Collard Greens

  1. Add the Greens: Stir in the chopped collard greens, mixing well with the sautéed onions and garlic.
  2. Add Broth and Seasonings: Pour in the vegetable or chicken broth. Add red pepper flakes, salt, and pepper. If using bacon or ham hock, add it now.
  3. Seal and Cook: Close the Instant Pot lid, ensuring the valve is set to sealing. Select “Pressure Cook” or “Manual” and set the timer for 20 minutes.

Release the Pressure

  1. Natural Release: Once the cooking time is complete, allow the Instant Pot to release pressure naturally for about 10 minutes. Then switch the valve to venting to release any remaining pressure.
  2. Open the Lid: Carefully open the lid and stir the collard greens. If desired, add apple cider vinegar for extra flavor.
