For the Collard Greens:
- 1 large bunch of collard greens (washed and chopped)
- 1 onion (diced)
- 2 cloves garlic (minced)
- 4 cups vegetable or chicken broth
- 1 tablespoon olive oil
- 1 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
For Extra Flavor (Optional):
- 2–3 slices of bacon or ham hock (for a smoky flavor)
- 1 tablespoon apple cider vinegar (for added tang)
Instructions
Prepare the Ingredients
- Chop the Greens: Remove the tough stems from the collard greens and chop them into bite-sized pieces.
- Prep the Aromatics: Dice the onion and mince the garlic.
Sauté the Aromatics
- Sauté in Instant Pot: Set the Instant Pot to “Sauté” mode. Add olive oil and let it heat up.
- Add Onion and Garlic: Once hot, add the diced onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
Pressure Cook the Collard Greens
- Add the Greens: Stir in the chopped collard greens, mixing well with the sautéed onions and garlic.
- Add Broth and Seasonings: Pour in the vegetable or chicken broth. Add red pepper flakes, salt, and pepper. If using bacon or ham hock, add it now.
- Seal and Cook: Close the Instant Pot lid, ensuring the valve is set to sealing. Select “Pressure Cook” or “Manual” and set the timer for 20 minutes.
Release the Pressure
- Natural Release: Once the cooking time is complete, allow the Instant Pot to release pressure naturally for about 10 minutes. Then switch the valve to venting to release any remaining pressure.
- Open the Lid: Carefully open the lid and stir the collard greens. If desired, add apple cider vinegar for extra flavor.
- Prep Time: 10 min.
- Cook Time: 20 min.
