Low Calorie Candy

  • Author: Martha
  • Total Time: 30 min.

Ingredients

Scale

For the Candy Base:

  • 1/2 cup unsweetened almond butter (or peanut butter if preferred)
  • 2 tablespoons honey or stevia (for sweetness)
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 tablespoon chia seeds (for extra fiber)
  • 1/4 cup unsweetened cocoa powder
  • Pinch of salt

Optional Toppings:

  • 1/4 cup crushed almonds or walnuts
  • 1 tablespoon shredded coconut
  • A few dark chocolate chips (for a hint of indulgence)
  • Sprinkles or crushed freeze-dried fruit for a pop of color

Instructions

Prepare the Candy Base

  1. Melt Coconut Oil: In a small saucepan over low heat, melt the coconut oil until it becomes liquid. Alternatively, you can melt it in the microwave for 30 seconds to 1 minute.
  2. Mix the Ingredients: In a large bowl, combine the melted coconut oil, almond butter, honey (or stevia), vanilla extract, and a pinch of salt. Stir until everything is well blended.
  3. Add Cocoa Powder: Slowly sift in the cocoa powder and mix until smooth and fully incorporated.
  4. Incorporate Chia Seeds: Stir in the chia seeds for an added crunch and fiber boost.
  5. Adjust Sweetness: Taste the mixture and, if needed, adjust sweetness by adding a little more honey or stevia to your liking.

Shape the Candy

  1. Pour into a Mold: Pour the mixture into a silicone candy mold or an ice cube tray for easy shaping. If you don’t have a mold, you can spread it onto a parchment-lined baking sheet to create bite-sized pieces.
  2. Add Toppings: If you want to add some texture or extra flavor, sprinkle your candy with crushed nuts, shredded coconut, or a few dark chocolate chips on top.
  3. Freeze to Set: Place the mold or tray in the freezer for about 20 minutes, or until the candy hardens completely. This ensures the candies will have a firm, bite-friendly texture.

Serve and Enjoy

  1. Pop Out the Candies: Once they are set, carefully pop the candy pieces out of the mold.
  2. Store Properly: Keep the candies in an airtight container in the fridge for up to a week or in the freezer for longer storage.
