For the Meatballs:
- 1 lb ground beef (or a mix of beef and pork for extra flavor)
- 1/4 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic, minced
- 1 tablespoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil (for cooking)
For the Biscuits:
- 1 can (8 biscuits) refrigerated biscuit dough (or homemade biscuit dough if you prefer)
- 1 cup shredded mozzarella cheese (or your favorite cheese)
For Serving (Optional):
- Marinara sauce for dipping (optional but highly recommended!)
Instructions
Prepare the Meatballs
- Mix Ingredients: In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper. Mix until everything is well combined.
- Shape Meatballs: Roll the mixture into small meatballs, about 1 to 1.5 inches in diameter. You should get about 12-16 meatballs depending on the size.
- Cook Meatballs: Heat the olive oil in a skillet over medium heat. Cook the meatballs for 6-8 minutes, turning occasionally until browned on all sides and fully cooked through. Set aside.
Assemble the Biscuits
- Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Prepare the Biscuit Dough: Open the can of biscuit dough and separate the biscuits. Flatten each biscuit into a 3-4 inch circle.
- Stuff the Biscuits: Place a meatball in the center of each flattened biscuit, and top with a spoonful of shredded mozzarella cheese.
- Seal the Biscuits: Fold the edges of the biscuit dough over the meatball and cheese, pinching the seams to seal them in. Place the stuffed biscuits seam-side down on the prepared baking sheet.
- Bake the Biscuits: Bake for 15-18 minutes, or until the biscuits are golden brown and cooked through. You may want to check the bottom of the biscuits to make sure they don’t get too browned.
Serve
- Serve with Marinara Sauce: These biscuits are delicious on their own, but if you like, serve them with a side of warm marinara sauce for dipping.
- Enjoy!: Once they’re cool enough to handle, dig in and enjoy the gooey, meaty goodness inside!
