Meatball Stuffed Biscuits

For the Meatballs:

  • 1 lb ground beef (or a mix of beef and pork for extra flavor)
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (for cooking)

For the Biscuits:

  • 1 can (8 biscuits) refrigerated biscuit dough (or homemade biscuit dough if you prefer)
  • 1 cup shredded mozzarella cheese (or your favorite cheese)

For Serving (Optional):

  • Marinara sauce for dipping (optional but highly recommended!)

Instructions

Prepare the Meatballs

  1. Mix Ingredients: In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper. Mix until everything is well combined.
  2. Shape Meatballs: Roll the mixture into small meatballs, about 1 to 1.5 inches in diameter. You should get about 12-16 meatballs depending on the size.
  3. Cook Meatballs: Heat the olive oil in a skillet over medium heat. Cook the meatballs for 6-8 minutes, turning occasionally until browned on all sides and fully cooked through. Set aside.

Assemble the Biscuits

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Prepare the Biscuit Dough: Open the can of biscuit dough and separate the biscuits. Flatten each biscuit into a 3-4 inch circle.
  3. Stuff the Biscuits: Place a meatball in the center of each flattened biscuit, and top with a spoonful of shredded mozzarella cheese.
  4. Seal the Biscuits: Fold the edges of the biscuit dough over the meatball and cheese, pinching the seams to seal them in. Place the stuffed biscuits seam-side down on the prepared baking sheet.
  5. Bake the Biscuits: Bake for 15-18 minutes, or until the biscuits are golden brown and cooked through. You may want to check the bottom of the biscuits to make sure they don’t get too browned.

Serve

  1. Serve with Marinara Sauce: These biscuits are delicious on their own, but if you like, serve them with a side of warm marinara sauce for dipping.
  2. Enjoy!: Once they’re cool enough to handle, dig in and enjoy the gooey, meaty goodness inside!
