For the Mashed Cauliflower:

  • 1 large head of cauliflower, chopped into florets
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup heavy cream (or milk for a lighter option)
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

Prepare the Cauliflower

  1. Steam the Cauliflower: In a large pot, bring water to a boil. Add the cauliflower florets and steam until tender, about 10-15 minutes.
  2. Drain and Dry: Once the cauliflower is cooked, drain well and let it sit for a few minutes to remove excess moisture.

Mash the Cauliflower

  1. Combine Ingredients: In a large mixing bowl, combine the steamed cauliflower, grated Parmesan cheese, heavy cream, butter, and minced garlic.
  2. Mash: Use a potato masher, food processor, or immersion blender to mash the cauliflower until smooth and creamy.
  3. Season: Taste and season with salt and pepper as desired.
