For the Peanut Butter Filling:

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

For the Chocolate Coating:

  • 2 cups semi-sweet chocolate chips
  • 2 tablespoons vegetable oil (optional, for a smoother coating)

Instructions

Make the Peanut Butter Filling

  1. Mix the Filling: In a mixing bowl, combine the creamy peanut butter, softened butter, powdered sugar, and vanilla extract. Mix until well combined and smooth.
  2. Form Balls: Scoop about 1 tablespoon of the mixture and roll it into a ball. Place each ball on a baking sheet lined with parchment paper.
  3. Chill: Once all the balls are formed, place the baking sheet in the freezer for about 30 minutes to firm up.

Coat with Chocolate

  1. Melt the Chocolate: In a microwave-safe bowl, combine the chocolate chips and vegetable oil (if using). Microwave in 30-second intervals, stirring in between, until melted and smooth.
  2. Dip the Buckeyes: Using a toothpick, dip each peanut butter ball into the melted chocolate, covering it almost entirely, leaving a small circle on top to resemble the buckeye nut. Return to the parchment-lined baking sheet.
  3. Chill Again: Once all the buckeyes are dipped, return them to the freezer for about 15 minutes to set the chocolate.
