  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup chopped green onions
  • Sour cream (optional, for dipping)

Instructions

Prepare the Potatoes

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.
  2. Wash and Pierce Potatoes: Scrub the potatoes under running water to remove any dirt. Dry them thoroughly with a towel. Pierce each potato a few times with a fork to allow steam to escape while baking.
  3. Roast the Potatoes: Drizzle the potatoes with olive oil and season with salt and pepper. Arrange them on the baking sheet and roast in the preheated oven for 35-40 minutes, or until they are tender when pierced with a fork.
  4. Cool and Slice: Once the potatoes are cooked, remove them from the oven and let them cool for a few minutes until they are easy to handle. Slice each potato into rounds about 1/2-inch thick.

Assemble the Potato Skin Bites

  1. Top with Cheese and Bacon: Place a generous amount of shredded cheddar cheese and crumbled bacon on each potato slice.
  2. Bake Again: Return the topped potato slices to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  3. Garnish with Green Onions: Remove the potato skin bites from the oven and sprinkle them with fresh chopped green onions.
