For the Gummies:

  • 1 cup pumpkin puree
  • 1/2 cup apple juice
  • 1/4 cup honey or maple syrup
  • 3 tablespoons gelatin (about 3 packets)
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract

Instructions

Prepare the Mixture

  1. Combine Ingredients: In a saucepan, whisk together the pumpkin puree, apple juice, honey (or maple syrup), pumpkin pie spice, and vanilla extract over medium heat until well combined and smooth.
  2. Add Gelatin: Gradually sprinkle the gelatin over the mixture, whisking continuously to avoid clumps. Keep whisking until the gelatin is fully dissolved and the mixture is smooth.

Mold the Gummies

  1. Pour into Molds: Remove the saucepan from heat and carefully pour the mixture into gummy molds or a silicone baking pan.
  2. Chill: Place the molds in the refrigerator for at least 1-2 hours, or until the gummies are set.

Unmold the Gummies

  1. Remove from Molds: Once the gummies are firm, carefully remove them from the molds. If using a pan, you can cut them into squares or desired shapes.
