  • Author: Martha
  • Total Time: 35 min.

Ingredients

Scale

For the Crostini:

  • 1 French baguette or rustic bread, sliced into ½-inch thick pieces
  • 1 cup fresh ricotta cheese
  • 2 tablespoons extra-virgin olive oil
  • Salt and freshly ground black pepper, to taste

For Toppings (choose your favorites):

  • Fresh herbs (basil, thyme, or mint)
  • Honey or balsamic glaze
  • Seasonal fruits (figs, pears, or strawberries)
  • Crushed red pepper flakes
  • Chopped nuts (walnuts or pistachios)

Instructions

Prepare the Crostini

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Toast the Bread: Arrange the sliced bread on a baking sheet. Drizzle with olive oil and sprinkle with salt. Bake for about 10-15 minutes, or until golden and crispy, flipping halfway through.
  3. Cool: Remove from the oven and let the bread cool slightly.

Assemble the Crostini

  1. Spread the Ricotta: Generously spread fresh ricotta cheese on each toasted slice of bread.
  2. Add Toppings: Top with your chosen seasonal ingredients, such as sliced figs, honey, or fresh herbs.
  3. Season: Drizzle with additional olive oil, and sprinkle with freshly ground black pepper and crushed red pepper flakes if desired.
