For the Shrimp Boil:

  • 1 lb large shrimp, peeled and deveined
  • 1 lb smoked sausage (like andouille), sliced into 1-inch pieces
  • 23 medium red potatoes, cut into quarters
  • 2 ears of corn, cut into halves or thirds
  • 1 tablespoon olive oil
  • 1 tablespoon Old Bay seasoning (or Cajun seasoning)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 lemon, cut into wedges (for serving)
  • Fresh parsley, chopped (for garnish)

Instructions

Prep the Ingredients

  1. Preheat Oven: Preheat your oven to 400°F (200°C).
  2. Prepare Vegetables and Sausage: Cut the potatoes into quarters and the corn into halves or thirds. Slice the sausage into 1-inch pieces.
  3. Season the Ingredients: In a large mixing bowl, combine the potatoes, sausage, and corn with olive oil, Old Bay seasoning, garlic powder, smoked paprika, thyme, salt, and pepper. Toss everything together until the ingredients are evenly coated in the seasoning.

Arrange on the Sheet Pan

  1. Layer the Sheet Pan: Spread the seasoned potatoes, sausage, and corn on a large sheet pan in an even layer. Make sure there’s enough room for everything to roast evenly.

Roast the Ingredients

  1. Roast: Place the sheet pan in the preheated oven and roast for about 20 minutes, or until the potatoes are just tender.
  2. Add Shrimp: While the potatoes and sausage are roasting, season the shrimp with a little more Old Bay, garlic powder, and a drizzle of olive oil. After 20 minutes, remove the pan from the oven and add the seasoned shrimp to the pan, arranging them around the potatoes and sausage.
  3. Finish Roasting: Return the sheet pan to the oven and roast for another 8-10 minutes, or until the shrimp are pink, opaque, and cooked through.

Serve

  1. Serve and Garnish: Once everything is done, remove the sheet pan from the oven. Garnish with freshly chopped parsley and serve with lemon wedges on the side for a burst of fresh flavor.
