For the Dinner:

  • 1.5 pounds turkey breast (boneless and skinless)
  • 2 cups Brussels sprouts, halved
  • 2 cups sweet potatoes, cubed
  • 1 red onion, sliced
  • 3 tablespoons olive oil
  • 2 teaspoons dried thyme
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

Prepare the Ingredients

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  2. Prepare the Vegetables: In a large bowl, toss the Brussels sprouts, sweet potatoes, and red onion with 2 tablespoons of olive oil, thyme, garlic powder, paprika, salt, and pepper until well coated.
  3. Prepare the Turkey: Rub the turkey breast with the remaining olive oil, salt, and pepper. Place it in the center of the prepared baking sheet.

Arrange and Roast

  1. Arrange on the Sheet Pan: Spread the vegetable mixture around the turkey on the baking sheet in an even layer.
  2. Roast: Bake in the preheated oven for 35-40 minutes, or until the turkey reaches an internal temperature of 165°F (75°C) and the vegetables are tender and caramelized.
  3. Rest the Turkey: Once cooked, remove the pan from the oven and let the turkey rest for 5-10 minutes before slicing.
