For the Dinner:
- 1.5 pounds turkey breast (boneless and skinless)
- 2 cups Brussels sprouts, halved
- 2 cups sweet potatoes, cubed
- 1 red onion, sliced
- 3 tablespoons olive oil
- 2 teaspoons dried thyme
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
Prepare the Ingredients
- Preheat Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- Prepare the Vegetables: In a large bowl, toss the Brussels sprouts, sweet potatoes, and red onion with 2 tablespoons of olive oil, thyme, garlic powder, paprika, salt, and pepper until well coated.
- Prepare the Turkey: Rub the turkey breast with the remaining olive oil, salt, and pepper. Place it in the center of the prepared baking sheet.
Arrange and Roast
- Arrange on the Sheet Pan: Spread the vegetable mixture around the turkey on the baking sheet in an even layer.
- Roast: Bake in the preheated oven for 35-40 minutes, or until the turkey reaches an internal temperature of 165°F (75°C) and the vegetables are tender and caramelized.
- Rest the Turkey: Once cooked, remove the pan from the oven and let the turkey rest for 5-10 minutes before slicing.
