For the Shrimp Topping:

  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon soy sauce
  • 2 teaspoons fresh lemon juice
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon green onion, finely chopped
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste

For the Toasts:

  • 8 slices of white or whole-grain bread, crusts removed
  • 2 tablespoons unsalted butter, softened
  • 1 tablespoon olive oil
  • A pinch of paprika (for garnish)

Instructions

Prepare the Shrimp Mixture

  1. Chop the Shrimp: Start by finely chopping the shrimp into small pieces. You want them to hold their shape but be small enough to easily spread on the bread.
  2. Make the Shrimp Mixture: In a bowl, combine the chopped shrimp with mayonnaise, Dijon mustard, soy sauce, lemon juice, parsley, green onion, and garlic. Stir until all ingredients are well incorporated.
  3. Season: Taste the shrimp mixture and season with salt and pepper as needed. The flavors should be savory with a little tang from the mustard and lemon.

Prepare the Toasts

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Butter the Bread: Spread softened butter on one side of each slice of bread. This will give your toasts a crispy golden exterior.
  3. Place on Baking Sheet: Arrange the slices of bread butter-side down on the baking sheet.
  4. Toast: Bake in the preheated oven for 8-10 minutes, or until the bread is golden and crispy.

Assemble the Shrimp Toasts

  1. Top the Toasts: Once the bread has toasted, remove it from the oven. Spoon a generous amount of the shrimp mixture onto each slice of toast, spreading it evenly to cover the surface.
  2. Bake Again: Return the topped toasts to the oven and bake for an additional 5-7 minutes, or until the shrimp topping is cooked through and slightly golden on top.

Serve

  1. Garnish: After baking, sprinkle the toasts with a pinch of paprika for color and an extra layer of flavor.
  2. Serve Hot: These toasts are best enjoyed right out of the oven while they’re still crispy and warm.
