For the Cookie Base:
- 1 box sugar cookie mix (or homemade sugar cookie dough)
- 1/2 cup unsalted butter, softened
- 4 oz cream cheese, softened
- 1/2 teaspoon vanilla extract
For the Coating:
- 12 oz white chocolate chips
- 1 tablespoon coconut oil (optional, for smoother coating)
For Decoration (Optional):
- Sprinkles
- Extra melted chocolate for drizzling
Instructions
Make the Cookie Base
- Prepare the Dough: In a large bowl, combine the sugar cookie mix, softened butter, cream cheese, and vanilla extract. Mix until the dough is smooth and combined.
- Roll Into Balls: Roll the dough into small 1-inch balls. Place them on a baking sheet lined with parchment paper.
- Chill: Refrigerate the dough balls for at least 1 hour to firm up. This step helps the truffles keep their shape when dipped in chocolate.
Coat the Truffles
- Melt the Chocolate: In a microwave-safe bowl, melt the white chocolate chips and coconut oil (if using) in 30-second intervals, stirring between each, until smooth and fully melted.
- Dip the Truffles: Dip each chilled cookie ball into the melted white chocolate, coating it evenly. You can use a fork or skewer to dip and remove the truffles from the chocolate.
- Set and Decorate: Place the dipped truffles back on the parchment paper and decorate them with sprinkles or a drizzle of extra melted chocolate while they’re still wet.
