  • ½ cup unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 23 tbsp milk or cream (for consistency)

Instructions

Prepare the Cake

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line them with parchment paper.
  2. Mix Dry Ingredients: In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. This helps ensure that the dry ingredients are evenly distributed.
  3. Add Wet Ingredients: Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Use an electric mixer or whisk to mix everything together until smooth.
  4. Incorporate Sour Cream: Add the sour cream and continue mixing until the batter is fully combined. The sour cream will help create that super-moist texture.
  5. Add Boiling Water: Gradually add the boiling water to the batter. The batter will be thin, but that’s exactly what you want for a moist cake.
  6. Bake the Cake: Divide the batter evenly between the prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool the Cakes: Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Make the Frosting (Optional)

  1. Prepare the Frosting: While the cakes are cooling, prepare the frosting. In a large bowl, beat the softened butter until creamy. Add the cocoa powder, powdered sugar, vanilla extract, and milk or cream. Beat until smooth and fluffy. Adjust the milk or powdered sugar as needed to reach your desired consistency.
  2. Frost the Cake: Once the cakes have cooled completely, place one layer on your serving platter. Spread a generous layer of frosting over the top. Add the second layer of cake and frost the top and sides.
