Ingredients

Scale

For the Casserole:

  • 4 medium sweet potatoes (about 2 pounds), peeled and cubed
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1/2 cup milk (or non-dairy milk)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

For the Topping:

  • 2 cups mini marshmallows

Instructions

Prepare the Sweet Potatoes

  1. Boil the Sweet Potatoes: In a large pot, add the cubed sweet potatoes and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and let cool slightly.
  2. Mash the Sweet Potatoes: In a large mixing bowl, mash the sweet potatoes with a potato masher or fork until smooth.
  3. Mix the Ingredients: Add the sugar, melted butter, milk, eggs, vanilla extract, cinnamon, and salt to the mashed sweet potatoes. Mix until well combined and creamy.

Assemble the Casserole

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Transfer to Baking Dish: Pour the sweet potato mixture into a greased 9×13-inch baking dish, spreading it evenly.
  3. Top with Marshmallows: Evenly sprinkle the mini marshmallows over the top of the sweet potato mixture.

Bake the Casserole

  1. Bake: Place the casserole in the preheated oven and bake for 30-40 minutes, or until the marshmallows are golden brown and puffed.
  2. Serve: Remove from the oven and let cool for a few minutes before serving. Enjoy the delicious combination of flavors!
