Instructions
Prepare the Sweet Potatoes
- Boil the Sweet Potatoes: In a large pot, add the cubed sweet potatoes and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and let cool slightly.
- Mash the Sweet Potatoes: In a large mixing bowl, mash the sweet potatoes with a potato masher or fork until smooth.
- Mix the Ingredients: Add the sugar, melted butter, milk, eggs, vanilla extract, cinnamon, and salt to the mashed sweet potatoes. Mix until well combined and creamy.
Assemble the Casserole
- Preheat Oven: Preheat your oven to 350°F (175°C).
- Transfer to Baking Dish: Pour the sweet potato mixture into a greased 9×13-inch baking dish, spreading it evenly.
- Top with Marshmallows: Evenly sprinkle the mini marshmallows over the top of the sweet potato mixture.
Bake the Casserole
- Bake: Place the casserole in the preheated oven and bake for 30-40 minutes, or until the marshmallows are golden brown and puffed.
