Instructions
Make the Lime Crema
- Combine the Crema Ingredients: In a small bowl, mix together the vegan sour cream, lime juice, cilantro, and chili powder. Stir until smooth.
- Season: Taste the crema and add salt and pepper to your liking. If you prefer a spicier kick, feel free to add a dash of hot sauce or cayenne pepper.
Prepare the Pinwheel Fillings
- Prepare the Veggies: Dice the bell pepper and cucumber, slice the onion thinly, and chop the cilantro.
- Mash the Avocado: If you’re using avocado, mash it up with a fork until smooth and set aside.
- Drain the Beans: Rinse and drain the black beans, ensuring there’s no excess liquid.
- Corn: If you’re using frozen corn, give it a quick thaw. If you’re using canned corn, drain it well.
Assemble the Pinwheels
- Spread the Crema: Take a tortilla and spread a generous amount of the lime crema over the entire surface, leaving about 1/2 inch along the edges.
- Add the Veggies: Layer on the shredded lettuce, diced bell pepper, cucumber, onion, and corn. Don’t be afraid to pile on the veggies for a super flavorful bite!
