  • 1/2 cup black beans, drained and rinsed
  • 1/4 cup corn kernels (fresh, frozen, or canned)
  • 1 small avocado, mashed (optional but highly recommended)
  • 1/2 cup shredded vegan cheese (optional)

For the Lime Crema:

  • 1/2 cup vegan sour cream (or cashew cream)
  • Juice of 1 lime
  • 1 tablespoon chopped fresh cilantro
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

Make the Lime Crema

  1. Combine the Crema Ingredients: In a small bowl, mix together the vegan sour cream, lime juice, cilantro, and chili powder. Stir until smooth.
  2. Season: Taste the crema and add salt and pepper to your liking. If you prefer a spicier kick, feel free to add a dash of hot sauce or cayenne pepper.

Prepare the Pinwheel Fillings

  1. Prepare the Veggies: Dice the bell pepper and cucumber, slice the onion thinly, and chop the cilantro.
  2. Mash the Avocado: If you’re using avocado, mash it up with a fork until smooth and set aside.
  3. Drain the Beans: Rinse and drain the black beans, ensuring there’s no excess liquid.
  4. Corn: If you’re using frozen corn, give it a quick thaw. If you’re using canned corn, drain it well.

Assemble the Pinwheels

  1. Spread the Crema: Take a tortilla and spread a generous amount of the lime crema over the entire surface, leaving about 1/2 inch along the edges.
  2. Add the Veggies: Layer on the shredded lettuce, diced bell pepper, cucumber, onion, and corn. Don’t be afraid to pile on the veggies for a super flavorful bite!
  3. Add Beans and Avocado: Sprinkle the black beans evenly across the tortilla, followed by the mashed avocado. (This will give you a creamy, rich bite in every roll.)
