Angel Food Cake Cups

  • Author: Martha
  • Total Time: 50 min.

Ingredients

Scale

For the Angel Food Cake:

  • 1 box angel food cake mix (with the ingredients required on the box, usually water)

For the Toppings:

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh berries (strawberries, blueberries, raspberries)
  • Mint leaves (optional)

Instructions

Prepare the Angel Food Cake

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin with non-stick spray or line with cupcake liners.
  2. Mix the Cake Batter: In a large mixing bowl, prepare the angel food cake mix according to the package instructions. Typically, this requires just adding water to the mix and beating it until it forms soft peaks.
  3. Fill the Muffin Tin: Spoon the batter evenly into the prepared muffin tin, filling each cup about two-thirds full.
  4. Bake: Bake the cake cups for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  5. Cool: Remove from the oven and allow to cool in the pan for about 5 minutes, then transfer the cake cups to a wire rack to cool completely.

Prepare the Whipped Cream Topping

  1. Whip the Cream: In a medium mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Use an electric mixer or whisk to whip the cream until it forms stiff peaks. This should take around 3-5 minutes.
  2. Set Aside: Once the whipped cream is ready, set it aside in the refrigerator to stay cool until you’re ready to serve.

Assemble the Angel Food Cake Cups

  1. Top the Cake: Once the angel food cake cups are completely cooled, use a spoon or piping bag to top each one with a generous amount of whipped cream.
  2. Add Fresh Berries: Gently place a few fresh berries on top of the whipped cream. You can use any combination of strawberries, blueberries, and raspberries for a vibrant and flavorful finish.
  3. Garnish: For an extra touch, garnish with a sprig of mint leaves on top of the berries.
