Ingredients
Scale
For the Skewers:
- 8–10 wooden or metal skewers (depending on how many skewers you want to make)
- 1 cup cherry or grape tomatoes
- 1 cup marinated olives (green, black, or a mix)
- 1 cup fresh mozzarella balls (bocconcini or ciliegine)
- 1/2 cup salami or pepperoni, sliced into rounds
- 1/2 cup artichoke hearts (either marinated or in oil), halved
- 1/2 cup roasted red peppers, cut into strips
- Fresh basil leaves (optional)
Instructions
Assemble the Skewers
- Prepare the Ingredients: Gather all your ingredients and cut the salami or pepperoni into bite-sized rounds. Slice the roasted peppers into strips and halve the artichoke hearts if needed.
- Skewer the Ingredients: Start by threading a cherry tomato onto the skewer, followed by a mozzarella ball, a slice of salami or pepperoni, an artichoke heart, a roasted red pepper strip, and a few olives. Repeat the process until the skewer is full, leaving a little space at the top for handling.
- Repeat: Repeat this process for all your skewers, making sure the ingredients are snug but not overcrowded. Feel free to mix and match as you go along.
Garnish and Serve
- Finish with Fresh Basil: If you’re using basil leaves, tuck a few leaves between the other ingredients for a fresh, aromatic touch.
- Serve: Arrange the finished skewers on a platter, drizzle with a little olive oil if desired, and serve immediately. Alternatively, you can refrigerate them until you’re ready to serve.
- Prep Time: 20 min.
