Instructions
Prepare the Cranberry Topping
- Prepare Cranberries: If you’re using fresh cranberries, wash and drain them. If using frozen cranberries, make sure they’re fully thawed and drained.
- Cook the Cranberries: In a small saucepan over medium heat, combine the cranberries, brown sugar, and balsamic vinegar (if using). Stir occasionally as the mixture cooks, and let it simmer for about 5-7 minutes, until the cranberries burst and the mixture thickens slightly.
- Add Orange Zest and Thyme: If desired, add the orange zest and thyme to the cranberry sauce, stirring them in for an extra burst of flavor. Set aside to cool.
Prepare the Brie
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
- Prepare the Brie: Place the Brie round on the prepared baking sheet. If you prefer, you can slice the top rind off to make it easier to scoop the cheese once it’s baked, but this is optional.
- Top with Cranberries: Spoon the cranberry mixture generously over the top of the Brie, spreading it evenly to cover the cheese.
Bake the Brie

- Cool Slightly: Once out of the oven, let the Brie rest for about 5 minutes before serving. This helps the cheese set slightly while still staying warm and gooey.
- Garnish: Garnish with additional fresh thyme or rosemary sprigs if desired.
- Serve with Accompaniments: Arrange crackers, sliced baguette, or fresh fruit around the Brie for dipping. You can also drizzle some honey over the top for an extra touch of sweetness.
