Continue microwaving in 30-second intervals, whisking between each interval, until the curd thickens to the consistency of a custard. This usually takes about 2-3 minutes. Keep a close eye on it to prevent overcooking.
5. Cool the Lemon Curd
Once the curd has thickened to your liking, remove it from the microwave. Let it cool in the bowl for a few minutes before transferring it to a jar or container to finish setting. The curd will continue to thicken as it cools.
