For the Stuffed Avocados:

  • 2 ripe avocados
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh basil leaves, chopped
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

For the Balsamic Glaze:

  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey (optional for sweetness)

Instructions

Prepare the Ingredients

  1. Slice the Avocados: Cut the avocados in half, remove the pit, and scoop out some of the flesh to create space for the filling. Be sure to leave a bit of avocado around the edges for structure.
  2. Prepare the Tomatoes and Basil: Slice the cherry tomatoes in half and chop the fresh basil leaves. Set aside.

Make the Balsamic Glaze

  1. Simmer the Glaze: In a small saucepan, combine the balsamic vinegar and honey (if using). Heat over medium-low heat and let it simmer for about 5-7 minutes until the mixture thickens to a syrupy consistency. Remove from heat and set aside to cool slightly.

Stuff the Avocados

  1. Fill the Avocados: In a small bowl, toss the halved cherry tomatoes and chopped basil with olive oil, salt, and pepper. Gently spoon this mixture into the hollowed-out avocado halves.
  2. Drizzle with Glaze: Once the avocados are filled, drizzle each with a little balsamic glaze for that extra burst of flavor.
