- 1 avocado, mashed

- 4 slices sourdough or ciabatta bread
- 2 tablespoons butter, softened
- 4 slices provolone or cheddar cheese
- 2 tablespoons mayonnaise (optional)
Instructions
Prepare the Chicken
- Season the Chicken – Rub the chicken breasts with olive oil, then season with garlic powder, paprika, salt, and black pepper.
- Cook the Chicken – Heat a skillet over medium heat and cook the chicken for about 4-5 minutes per side until golden brown and fully cooked. Let it rest for a few minutes before slicing.
Prepare the Avocado Spread
- Mash the Avocado – In a small bowl, mash the avocado with lemon juice, salt, and red pepper flakes for a slight kick.
Assemble the Sandwich
- Butter the Bread – Spread softened butter on one side of each bread slice.
- Layer the Ingredients – On the unbuttered side of two bread slices, spread a thin layer of mayonnaise (if using). Then, add a slice of cheese, sliced chicken, a generous layer of avocado spread, another slice of cheese, and top with the second piece of bread (buttered side facing out).
Cook the Sandwich
- Toast the Sandwich – Heat a skillet or griddle over medium heat. Cook the sandwich for about 3-4 minutes per side, pressing down gently with a spatula, until the bread is golden brown and the cheese is melted.
- Slice and Serve – Let the sandwich rest for a minute, then cut in half and serve warm.
