1. Prepare the Noodles
- Cook the Noodles: Bring a large pot of water to a boil. Cook the chow mein noodles (or spaghetti) according to package directions. Drain and set aside.
- Rinse with Cold Water: Once the noodles are cooked, rinse them under cold water to stop the cooking process and prevent them from sticking.
2. Stir-Fry the Chicken
- Heat the Pan: In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat.
- Cook the Chicken: Add the sliced chicken to the pan and stir-fry for about 5-7 minutes, until cooked through and golden brown on the outside. Remove the chicken from the pan and set aside.
3. Cook the Vegetables
- Sauté the Veggies: In the same pan, add the sliced onion, red bell pepper, shredded carrots, and cabbage (if using). Stir-fry for about 4-5 minutes, or until the vegetables are tender-crisp. Add the minced garlic and cook for another 1-2 minutes, until fragrant.
4. Combine Everything
- Add the Noodles and Chicken: Return the cooked chicken to the pan along with the cooked noodles. Stir everything together to combine.
- Season the Chow Mein: Add the soy sauce, oyster sauce (if using), hoisin sauce (if using), sesame oil, and black pepper. Toss everything to coat the chicken, veggies, and noodles evenly in the sauce.
5. Garnish and Serve
- Garnish: Sprinkle with chopped green onions and sesame seeds (if using). Serve immediately while hot.
