For the Poppers:
- 12 large jalapeños (fresh)
- 1 cup chili (canned or homemade)
- 1 cup shredded cheddar cheese (or a blend of cheeses like mozzarella and cheddar)
- 8 slices of bacon (cut in half)
- 1/4 cup cream cheese (softened)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
Prepare the Poppers
- Preheat the Oven: Start by preheating your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Slice the Jalapeños: Cut each jalapeño in half lengthwise. Use a spoon to scoop out the seeds and membranes for a milder taste, or leave them in for extra heat.
- Cook the Bacon: Cook the bacon in a skillet over medium heat until it’s crispy, then set it aside on paper towels to drain. Once cooled, cut each slice in half to wrap around the jalapeño poppers.
- Prepare the Filling: In a medium bowl, combine the chili, shredded cheddar cheese, cream cheese, garlic powder, onion powder, salt, and pepper. Stir everything together until well combined.
- Stuff the Jalapeños: Spoon the chili cheese mixture into each jalapeño half, filling them generously.
- Wrap with Bacon: Wrap each stuffed jalapeño with half a slice of bacon and secure it with a toothpick.
- Bake: Arrange the stuffed and wrapped jalapeños on the prepared baking sheet. Bake for 20-25 minutes or until the bacon is crispy and the cheese is melted and bubbly.
- Serve: Once baked, let them cool slightly before serving. Garnish with fresh cilantro or a drizzle of sour cream if desired.
