For the Poppers:

  • 12 large jalapeños (fresh)
  • 1 cup chili (canned or homemade)
  • 1 cup shredded cheddar cheese (or a blend of cheeses like mozzarella and cheddar)
  • 8 slices of bacon (cut in half)
  • 1/4 cup cream cheese (softened)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

Prepare the Poppers

  1. Preheat the Oven: Start by preheating your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice the Jalapeños: Cut each jalapeño in half lengthwise. Use a spoon to scoop out the seeds and membranes for a milder taste, or leave them in for extra heat.
  3. Cook the Bacon: Cook the bacon in a skillet over medium heat until it’s crispy, then set it aside on paper towels to drain. Once cooled, cut each slice in half to wrap around the jalapeño poppers.
  4. Prepare the Filling: In a medium bowl, combine the chili, shredded cheddar cheese, cream cheese, garlic powder, onion powder, salt, and pepper. Stir everything together until well combined.
  5. Stuff the Jalapeños: Spoon the chili cheese mixture into each jalapeño half, filling them generously.
  6. Wrap with Bacon: Wrap each stuffed jalapeño with half a slice of bacon and secure it with a toothpick.
  7. Bake: Arrange the stuffed and wrapped jalapeños on the prepared baking sheet. Bake for 20-25 minutes or until the bacon is crispy and the cheese is melted and bubbly.
  8. Serve: Once baked, let them cool slightly before serving. Garnish with fresh cilantro or a drizzle of sour cream if desired.
