- 2 cups of dulce de leche (you can substitute caramel sauce if needed)
- 8 oz cream cheese (softened)
- 1 cup heavy cream (or whipped cream for a lighter texture)
- 1 tsp vanilla extract (optional, but it enhances the flavor)
For the Layers:
- 2 packs (about 400g) of chocolate cookies (such as ChocoChips or Digestive biscuits)
- 1–2 cups of strong coffee (or milk if you prefer a lighter flavor)
- A pinch of cocoa powder (optional, for added chocolatey richness)
Instructions
Prepare the Filling
- Blend the Filling Ingredients: In a large mixing bowl, combine the softened cream cheese, dulce de leche, heavy cream, and vanilla extract (if using). Use an electric mixer on medium speed to blend everything together until smooth and creamy.
- Whisk for Lightness: Continue to whisk the mixture for about 2-3 minutes to incorporate air and make it light and fluffy.
Prepare the Cookie Layers
- Brew the Coffee: Brew about 1 to 1.5 cups of strong coffee. If you prefer a less intense flavor, you can substitute with milk.
- Dip the Cookies: Quickly dip each cookie into the coffee (or milk) for just a second—don’t let them soak too long! You want the cookies to soften slightly but not become soggy.
- Layer the Cookies: Arrange the dipped cookies in the bottom of a rectangular or square dish, covering the entire base. You may need to break some cookies to fit snugly.
Assemble the Chocotorta
- Spread the Filling: Once the cookies are arranged, spread a generous layer of the creamy filling over the cookies. Use a spatula to smooth it out evenly.
- Repeat Layers: Add another layer of dipped cookies on top of the filling. Follow this with another layer of filling. Repeat the layers until you run out of cookies or filling, finishing with a final layer of filling on top.
- Chill: Refrigerate the Chocotorta for at least 4 hours, but ideally overnight. The chilling process allows the flavors to meld and the dessert to set.
