For the Pasta:
- 12 oz pasta (spaghetti, fettuccine, or penne)
- 1 tablespoon salt (for boiling water)
For the Sauce:
- 2 tablespoons butter
- 4 cloves garlic, minced
- 8 oz cream cheese, softened
- 1 cup pasta water (reserved)
- 1/2 cup milk (whole or 2%)
- 1/2 cup grated parmesan cheese
- 1 teaspoon Italian seasoning
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt (adjust to taste)
- 1/4 teaspoon red pepper flakes (optional, for a little heat)
For Garnish:
- Fresh parsley, chopped
- Extra parmesan cheese
Instructions
Cook the Pasta
- Boil Water – Bring a large pot of salted water to a rolling boil.
- Cook Pasta – Add pasta and cook according to package instructions until al dente.
- Reserve Pasta Water – Before draining, scoop out 1 cup of pasta water and set it aside.
- Drain Pasta – Drain the rest of the water and set the pasta aside.
Prepare the Cream Cheese Sauce
- Melt Butter – In a large pan over medium heat, melt butter.
- Sauté Garlic – Add minced garlic and cook for about 30 seconds until fragrant.
- Add Cream Cheese – Cut the softened cream cheese into chunks and add it to the pan. Stir until melted and smooth.
- Pour in Milk – Slowly add the milk, stirring constantly to prevent lumps.
- Thin the Sauce – Add the reserved pasta water a little at a time, stirring until you reach your desired sauce consistency.
- Season – Stir in parmesan cheese, Italian seasoning, black pepper, salt, and red pepper flakes. Mix well.
Combine Pasta & Sauce
- Add Pasta to Sauce – Toss the drained pasta into the sauce, coating it evenly.
- Adjust Consistency – If the sauce is too thick, add a little more pasta water or milk.
- Taste & Adjust – Add extra salt, pepper, or parmesan as needed.
- Garnish & Serve – Sprinkle with fresh parsley and extra parmesan cheese before serving.
