Creamy Mango Mousse

For the Mousse:

  • 2 ripe mangoes, peeled and diced (or 1 1/2 cups of mango puree)
  • 1 cup heavy cream, chilled
  • 1/2 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh lime juice (optional, but adds a nice tang)
  • 1/2 teaspoon unflavored gelatin (optional, for extra stability)
  • 2 tablespoons water (if using gelatin)

Instructions

Prepare the Mango Puree

  1. Peel and Dice the Mangoes: Peel the mangoes and cut them into small chunks. If you’re using canned mango puree, just measure out 1 1/2 cups.
  2. Puree the Mango: Place the diced mangoes in a blender or food processor and blend until smooth. If needed, add a splash of water to help it blend. Set aside.

Prepare the Mousse Base

  1. Whip the Cream: In a large mixing bowl, whip the chilled heavy cream using an electric mixer until stiff peaks form. This should take about 3-5 minutes. Be careful not to overwhip—it should be smooth and fluffy, not grainy.
  2. Blend Cream Cheese and Sugar: In a separate bowl, beat the softened cream cheese and powdered sugar together until smooth. You can use a hand mixer or stand mixer for this step.
  3. Add Mango Puree and Lime Juice: Add the mango puree and lime juice (if using) to the cream cheese mixture and mix until fully combined.
  4. Incorporate Whipped Cream: Gently fold in the whipped cream, being careful not to deflate it. Use a spatula and fold it in slowly, combining it until the mousse is smooth and airy.

Optional: Add Gelatin for Extra Stability

  1. Prepare Gelatin: If you’re using gelatin to help stabilize the mousse, sprinkle the gelatin over 2 tablespoons of water in a small bowl. Let it sit for 5 minutes to bloom.
  2. Dissolve Gelatin: Once the gelatin has bloomed, heat it gently in the microwave for about 10-15 seconds, or until fully dissolved. Let it cool slightly, then fold it into the mango mousse mixture.

Chill the Mousse

  1. Transfer to Serving Dishes: Spoon the mousse into individual serving glasses or a large bowl.
  2. Chill: Refrigerate the mousse for at least 3 hours, or overnight for the best texture and flavor.

Serve and Garnish

  1. Garnish: Before serving, garnish the mousse with fresh mango chunks, a sprig of mint, or a sprinkle of toasted coconut for added texture and flavor.
  2. Serve: Serve chilled and enjoy the tropical sweetness with every spoonful!
