Instructions
Prepare the Batter
- Preheat Oven: Set your oven to 425°F (220°C). Grease four 6-ounce ramekins with butter and lightly dust with cocoa powder to prevent sticking.
- Melt Chocolate and Butter: In a microwave-safe bowl, melt the chopped chocolate and butter together in 20-second intervals, stirring in between until smooth. Let it cool slightly.
- Whisk the Eggs and Sugar: In a separate bowl, whisk the eggs, egg yolks, powdered sugar, and vanilla extract until light and slightly frothy.
- Combine Ingredients: Gently fold the melted chocolate into the egg mixture, stirring continuously.
- Add Flour and Salt: Sift in the flour and salt, then fold everything together until just combined.
Bake the Lava Cakes
- Divide the Batter: Pour the batter evenly into the prepared ramekins.
- Bake: Place the ramekins on a baking sheet and bake for 12-15 minutes, until the edges are firm but the center is still soft.
- Cool Slightly: Let the cakes rest for 5 minutes before serving.
