For the Fries:

  • 4 large russet potatoes (or use frozen fries for convenience)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper

For the Toppings:

  • 1 ½ cups shredded cheddar cheese
  • ½ cup mozzarella cheese
  • 6 slices crispy bacon, crumbled
  • 1 small red onion, finely diced
  • 1 cup cooked ground beef (optional)
  • ½ cup jalapeño slices (optional for heat)
  • ¼ cup green onions, chopped
  • ¼ cup sour cream or ranch dressing (for drizzling)

Instructions

Prepare the Fries

  1. Preheat the Oven: Set your oven to 425°F (220°C) or heat a deep fryer to 375°F (190°C).
  2. Slice the Potatoes: Cut the potatoes into thin fries or wedges. If using frozen fries, skip this step.
  3. Season the Fries: Toss the fries with olive oil, garlic powder, smoked paprika, salt, and black pepper.
  4. Bake or Fry:
    • Oven Method: Spread fries evenly on a baking sheet and bake for 20-25 minutes, flipping halfway.
    • Fryer Method: Fry in batches for 3-4 minutes until golden brown and crispy. Drain on paper towels.
  5. Keep Warm: Place fries on a large ovenproof dish and set aside.

Add the Toppings

  1. Layer the Cheese: Sprinkle the shredded cheddar and mozzarella evenly over the fries.
  2. Add the Bacon & Meat: Crumble crispy bacon over the top and add cooked ground beef if using.
  3. Onions & Jalapeños: Scatter red onions and jalapeño slices for extra flavor.

Melt Everything Together

  1. Broil: Place the loaded fries under a broiler for 2-3 minutes, or until the cheese is melted and bubbly.
  2. Drizzle with Sauce: Finish with sour cream or ranch dressing for a creamy touch.
  3. Garnish: Sprinkle green onions on top for added freshness.
