For the Taco Boats:

  • 8 small flour tortillas (or soft taco-sized)
  • 1 lb ground beef (or chicken or turkey)
  • 1 packet taco seasoning (or homemade seasoning mix)
  • 1/2 cup salsa
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded lettuce
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced jalapeños (optional)
  • 1/4 cup sour cream or Greek yogurt
  • 1/4 cup sliced green onions
  • 1/4 cup guacamole (optional)

Instructions

Prepare the Taco Filling

  1. Cook the Meat: In a large skillet, brown the ground beef (or chicken/turkey) over medium heat. Break it up as it cooks. Once the meat is fully cooked, drain any excess fat.
  2. Add the Seasoning: Sprinkle the taco seasoning over the meat and add a bit of water according to the seasoning packet instructions. Stir to combine and let the mixture simmer for a few minutes until thickened and well-coated with seasoning.
  3. Warm the Salsa: Add the salsa to the seasoned meat and stir it in, letting the mixture cook for another 2-3 minutes until everything is heated through.

Shape the Taco Boats

  1. Prep the Tortillas: Heat the flour tortillas in the microwave for about 15-20 seconds to soften them. This will make them easier to shape.
  2. Form the Boats: Place each tortilla over a small oven-safe bowl or pan. Carefully shape the edges into a boat-like shape by pressing the sides up, ensuring the center is slightly open for filling.

Assemble the Taco Boats

  1. Fill with Meat: Spoon the seasoned taco filling into the center of each tortilla boat, making sure to fill them generously.
  2. Add Toppings: Sprinkle shredded cheese over the meat and place the taco boats in the oven or under a broiler for about 5 minutes, or until the cheese is melted and bubbly.
  3. Garnish: Once the cheese is melted, remove the taco boats from the oven and top them with fresh shredded lettuce, diced tomatoes, sliced jalapeños, sour cream, green onions, and guacamole.
