For the Salmon Bites:

  • 1 lb (450g) fresh salmon fillet, skin removed and cut into bite-sized cubes
  • 2 tbsp olive oil
  • Salt and pepper, to taste

For the Honey Garlic Glaze:

  • 3 tbsp honey
  • 4 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar (or white vinegar)
  • 1 tsp grated ginger (optional)
  • 1 tbsp cornstarch mixed with 2 tbsp water (for thickening)

Instructions

Prepare the Salmon Bites

  1. Cut the Salmon: Start by cutting your salmon fillet into bite-sized cubes. Try to keep them as uniform as possible so they cook evenly.
  2. Season the Salmon: Sprinkle the salmon pieces with salt and pepper. Drizzle with olive oil and toss to coat, ensuring each piece is seasoned well.

Make the Honey Garlic Glaze

  1. Prepare the Sauce: In a small bowl, mix together the honey, soy sauce, rice vinegar, minced garlic, and grated ginger (if using).
  2. Thicken the Sauce: In a separate small bowl, combine the cornstarch and water to make a slurry. Add this to the honey garlic mixture to thicken it. Set the glaze aside.

Cook the Salmon Bites

  1. Heat the Pan: Place a large skillet over medium-high heat and add the olive oil. Once the oil is hot, add the salmon cubes in a single layer.
  2. Sear the Salmon: Let the salmon cook for about 2-3 minutes on each side, until they are golden brown and slightly crispy on the edges. Be careful not to overcook; salmon cooks quickly!
  3. Add the Glaze: Pour the honey garlic glaze over the cooked salmon bites, stirring to coat evenly. Let it simmer for another 2-3 minutes, allowing the sauce to thicken and caramelize slightly.
  4. Serve: Remove from heat and serve the salmon bites immediately, garnished with fresh herbs like parsley or green onions, if desired.
