- 2 tbsp olive oil
- Salt and pepper, to taste
For the Honey Garlic Glaze:
- 3 tbsp honey
- 4 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp rice vinegar (or white vinegar)
- 1 tsp grated ginger (optional)
- 1 tbsp cornstarch mixed with 2 tbsp water (for thickening)
Instructions
Prepare the Salmon Bites
- Cut the Salmon: Start by cutting your salmon fillet into bite-sized cubes. Try to keep them as uniform as possible so they cook evenly.
- Season the Salmon: Sprinkle the salmon pieces with salt and pepper. Drizzle with olive oil and toss to coat, ensuring each piece is seasoned well.
Make the Honey Garlic Glaze
- Prepare the Sauce: In a small bowl, mix together the honey, soy sauce, rice vinegar, minced garlic, and grated ginger (if using).
- Thicken the Sauce: In a separate small bowl, combine the cornstarch and water to make a slurry. Add this to the honey garlic mixture to thicken it. Set the glaze aside.
Cook the Salmon Bites
- Heat the Pan: Place a large skillet over medium-high heat and add the olive oil. Once the oil is hot, add the salmon cubes in a single layer.
- Sear the Salmon: Let the salmon cook for about 2-3 minutes on each side, until they are golden brown and slightly crispy on the edges. Be careful not to overcook; salmon cooks quickly!
- Add the Glaze: Pour the honey garlic glaze over the cooked salmon bites, stirring to coat evenly. Let it simmer for another 2-3 minutes, allowing the sauce to thicken and caramelize slightly.
- Serve: Remove from heat and serve the salmon bites immediately, garnished with fresh herbs like parsley or green onions, if desired.
