For the Sandwiches:

  • 8 slices of soft white bread (ideally Japanese milk bread, but regular soft white bread will work too)
  • 1 cup heavy whipping cream
  • 12 tablespoons powdered sugar
  • 1 teaspoon vanilla extract (optional)

For the Fruit Filling:

  • 68 strawberries (sliced)
  • 1 ripe banana (sliced)
  • 12 kiwi fruits (peeled and sliced)
  • A handful of grapes (optional)

Instructions

Prepare the Cream Filling

  1. Whip the Cream: In a chilled bowl, pour in the heavy whipping cream. Using a hand mixer or stand mixer, whip the cream on medium-high speed until soft peaks form.
  2. Sweeten the Cream: Add powdered sugar and vanilla extract (if using) to the whipped cream, and continue to whip until the cream is smooth, soft, and slightly stiff.
  3. Set Aside: Once the cream is ready, set it aside for assembling the sandwiches.

Prepare the Fruit

  1. Slice the Fruits: Slice your fruits into thin, even slices. For the strawberries, remove the tops and slice them lengthwise. For the bananas, peel and slice them into rounds. Peel and slice the kiwi as well.
  2. Arrange the Fruit: Place the fruit slices in small bowls for easy access when assembling the sandwiches.

Assemble the Sandwiches

  1. Cut the Bread: Trim the crusts off the slices of bread, if desired, to create a cleaner, more aesthetic sandwich. You can also leave the crusts on for a more rustic look if you prefer.
  2. Spread the Cream: Spread a generous amount of whipped cream on one slice of bread. Be sure to cover the entire surface evenly.
  3. Layer the Fruit: Begin layering the sliced fruit on top of the cream. Start with a layer of strawberries, followed by banana slices, kiwi, and grapes (if using). Make sure to arrange the fruits in a colorful, overlapping pattern for a visually appealing effect.
  4. Top with More Cream: Spread another layer of whipped cream over the fruits.
  5. Close the Sandwich: Place another slice of bread on top to complete the sandwich. Gently press it down to ensure the sandwich holds together.
  6. Slice and Serve: Using a sharp knife, slice the sandwich into halves or quarters. Arrange the sandwiches on a serving plate, showcasing the beautiful layers of fruit inside.
