For the Loaf:
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup olive oil (extra virgin for the best flavor)
- 1 cup granulated sugar
- 2 large eggs
- ½ cup Greek yogurt (for extra moisture)
- Zest of 2 lemons
- ¼ cup fresh lemon juice (about 2 lemons)
- 1 teaspoon vanilla extract
For the Glaze (Optional):
- ½ cup powdered sugar
- 2 tablespoons fresh lemon juice
Instructions
Prepare the Oven & Loaf Pan
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper for easy removal.
- Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
Mix the Wet Ingredients
- Combine Wet Ingredients: In a large bowl, whisk together the olive oil, sugar, eggs, Greek yogurt, lemon zest, lemon juice, and vanilla extract until smooth and well-combined.
- Add Dry Ingredients: Gradually fold the dry ingredients into the wet mixture, stirring just until combined. Be careful not to overmix.
Bake the Loaf
- Transfer to Loaf Pan: Pour the batter into the prepared loaf pan and spread it out evenly.
- Bake: Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean. If the top starts to brown too quickly, cover it with aluminum foil during the last 10 minutes of baking.
- Cool: Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Prepare the Glaze (Optional)
- Make the Glaze: In a small bowl, whisk together the powdered sugar and lemon juice until smooth. If you’d like a thinner glaze, add a little more lemon juice, one teaspoon at a time.
- Glaze the Loaf: Once the loaf has cooled, drizzle the glaze over the top for a sweet finishing touch.
