For the Crust:

  • 2 premade pie crusts (or homemade if preferred)
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)

For the Apple Filling:

  • 2 medium apples (Granny Smith or Honeycrisp), peeled and diced
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon lemon juice
  • 1 tablespoon cornstarch
  • 1 tablespoon butter (melted)

For Topping (Optional):

  • 1 tablespoon granulated sugar
  • 1/2 teaspoon cinnamon

Instructions

Prepare the Apple Filling

  1. Dice the Apples – Peel and dice the apples into small, even pieces.
  2. Mix Ingredients – In a mixing bowl, combine diced apples, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Stir until the apples are well coated.
  3. Cook the Filling – In a pan over medium heat, melt butter and add the apple mixture. Cook for about 5 minutes until the apples soften slightly. Set aside to cool.

Prepare the Pie Crust

  1. Preheat Oven – Set your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Roll Out the Dough – On a floured surface, roll out the pie crusts slightly.
  3. Cut Circles – Using a 3-inch round cookie cutter or a glass, cut out 12 circles from the dough.

Assemble the Mini Pies

  1. Fill the Pies – Place half of the dough circles on the prepared baking sheet. Spoon a small amount of apple filling into the center of each circle, leaving space around the edges.
  2. Top with Crust – Place another dough circle on top of each filled pie and gently press the edges to seal.
  3. Crimp the Edges – Use a fork to press the edges down for a decorative finish.
  4. Add Vent Holes – Cut small slits in the top of each pie to allow steam to escape.

Bake the Pies

  1. Make Egg Wash – Whisk the egg with milk and brush it over the tops of the pies.
  2. Sprinkle Topping – Mix granulated sugar and cinnamon, then sprinkle over the pies for extra sweetness.
  3. Bake – Bake for 20-25 minutes or until the pies are golden brown.
  4. Cool – Allow the pies to cool for 10 minutes before serving.
