For the Crust:
- 2 premade pie crusts (or homemade if preferred)
- 1 egg (for egg wash)
- 1 tablespoon milk (for egg wash)
For the Apple Filling:
- 2 medium apples (Granny Smith or Honeycrisp), peeled and diced
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 teaspoon lemon juice
- 1 tablespoon cornstarch
- 1 tablespoon butter (melted)
For Topping (Optional):
- 1 tablespoon granulated sugar
- 1/2 teaspoon cinnamon
Instructions
Prepare the Apple Filling
- Dice the Apples – Peel and dice the apples into small, even pieces.
- Mix Ingredients – In a mixing bowl, combine diced apples, granulated sugar, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Stir until the apples are well coated.
- Cook the Filling – In a pan over medium heat, melt butter and add the apple mixture. Cook for about 5 minutes until the apples soften slightly. Set aside to cool.
Prepare the Pie Crust
- Preheat Oven – Set your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Roll Out the Dough – On a floured surface, roll out the pie crusts slightly.
- Cut Circles – Using a 3-inch round cookie cutter or a glass, cut out 12 circles from the dough.
Assemble the Mini Pies
- Fill the Pies – Place half of the dough circles on the prepared baking sheet. Spoon a small amount of apple filling into the center of each circle, leaving space around the edges.
- Top with Crust – Place another dough circle on top of each filled pie and gently press the edges to seal.
- Crimp the Edges – Use a fork to press the edges down for a decorative finish.
- Add Vent Holes – Cut small slits in the top of each pie to allow steam to escape.
Bake the Pies
- Make Egg Wash – Whisk the egg with milk and brush it over the tops of the pies.
- Sprinkle Topping – Mix granulated sugar and cinnamon, then sprinkle over the pies for extra sweetness.
- Bake – Bake for 20-25 minutes or until the pies are golden brown.
- Cool – Allow the pies to cool for 10 minutes before serving.
