  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 green onions, chopped (for garnish)

For the Sauce:

  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 2 tablespoons brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon hoisin sauce (optional but adds a nice depth)
  • 1 teaspoon sriracha sauce (optional, for a bit of heat)

Instructions

Cook the Noodles

  1. Cook the Noodles: Bring a large pot of salted water to a boil. Cook the noodles according to package directions, then drain and set aside.
  2. Sauté the Noodles: Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat. Add the cooked noodles and stir-fry them for about 2-3 minutes until they get a bit crispy around the edges. Remove from the pan and set aside.

Prepare the Ground Beef

  1. Cook the Beef: In the same skillet, heat the olive oil over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes.
  2. Add Garlic and Ginger: Add the minced garlic and grated ginger to the beef, stirring constantly for about 1 minute, until fragrant.

Make the Sauce

  1. Prepare the Sauce: In a small bowl, whisk together the soy sauce, brown sugar, rice vinegar, hoisin sauce (if using), and sriracha sauce (if using).
  2. Combine: Pour the sauce over the cooked beef and stir to coat the meat evenly. Let it simmer for 2-3 minutes, allowing the flavors to meld together.

Combine Everything

  1. Add the Noodles: Return the cooked noodles to the pan with the beef and sauce. Toss everything together until the noodles are coated in the flavorful sauce and heated through.
  2. Garnish: Top the dish with chopped green onions for a fresh, crunchy contrast.
