Ingredients
Scale
- 4 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika (or regular paprika)
- Salt and pepper to taste
- Fresh herbs (optional, for garnish)
Instructions
Prep the Chicken
- Preheat the Oven: Start by preheating your oven to 425°F (220°C). This high heat ensures that the chicken gets a crispy skin while staying juicy on the inside.
- Season the Chicken: Pat the chicken thighs dry with paper towels to remove excess moisture (this will help with crispiness). Then, rub them with olive oil and season generously with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Arrange on a Baking Sheet: Place the seasoned chicken thighs on a baking sheet, skin side up. Make sure they’re spaced apart to allow the heat to circulate evenly.
Roast the Chicken
- Roast the Chicken: Put the baking sheet in the preheated oven and roast for 35-40 minutes, or until the chicken skin is golden brown and crispy, and the internal temperature reaches 165°F (75°C).
- Rest Before Serving: Once the chicken is cooked, remove it from the oven and let it rest for a few minutes. This helps the juices redistribute and keeps the chicken tender.
