  • Author: Martha
  • Total Time: 25 min.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Optional Fillings:

  • Mini chocolate chips
  • Blueberries
  • Diced bananas
  • Chopped nuts
  • Cinnamon sugar

Instructions

Prepare the Batter

  1. Preheat the Oven – Set your oven to 375°F (190°C) and lightly grease a mini muffin pan.
  2. Mix Dry Ingredients – In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Combine Wet Ingredients – In a separate bowl, whisk the buttermilk, egg, melted butter, and vanilla extract until smooth.
  4. Mix Batter – Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid overmixing; a few lumps are okay!
  5. Add Fillings – Gently fold in your choice of chocolate chips, berries, or nuts.

Bake the Poppers

  1. Fill the Muffin Pan – Spoon the batter into the greased mini muffin tin, filling each cup about ¾ full.
  2. Bake – Place in the oven and bake for 12-15 minutes, or until the tops are golden and a toothpick inserted in the center comes out clean.
  3. Cool – Let the poppers cool in the pan for a few minutes before transferring them to a wire rack.

Serve and Enjoy

  1. Dip in Syrup – Serve warm with a side of maple syrup for dipping.
  2. Dust with Powdered Sugar – Sprinkle a little powdered sugar for a touch of sweetness.
  3. Add a Dollop of Whipped Cream – A fun way to make them extra special.
  4. Pair with Fruit – Serve with sliced strawberries, bananas, or blueberries.
  5. Drizzle with Honey or Nut Butter – A healthier alternative to syrup.
