Instructions
Prepare the Batter
- Preheat the Oven – Set your oven to 375°F (190°C) and lightly grease a mini muffin pan.
- Mix Dry Ingredients – In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Combine Wet Ingredients – In a separate bowl, whisk the buttermilk, egg, melted butter, and vanilla extract until smooth.
- Mix Batter – Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid overmixing; a few lumps are okay!

Bake the Poppers
- Fill the Muffin Pan – Spoon the batter into the greased mini muffin tin, filling each cup about ¾ full.
