Scale
For the Skewers:
- 8 oz short pasta (rotini, farfalle, or penne work best)
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, sliced
- 1/2 cup red onion, thinly sliced
- 1/2 cup black olives, pitted and halved
- 1/4 cup feta cheese, cubed (optional)
- 1/4 cup fresh basil or parsley, chopped
- 8–10 skewers (wooden or metal)
For the Dressing:
- 3 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey (optional)
- Salt and pepper to taste
Instructions
Cook the Pasta
- Boil the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions, usually around 10 minutes for al dente. Drain and rinse under cold water to cool the pasta quickly.
- Set Aside to Drain: Once the pasta is cool, set it aside to drain completely.
Prepare the Veggies and Other Ingredients
- Slice the Veggies: While the pasta is cooking, halve the cherry tomatoes, slice the cucumber, and thinly slice the red onion. Cut the feta cheese into cubes if using.
- Chop Fresh Herbs: Roughly chop your basil or parsley for garnish.
Make the Dressing
- Mix the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey (if using), and a pinch of salt and pepper. Adjust the seasoning to taste.
Assemble the Skewers
- Build the Skewers: Start by threading the cooked pasta onto the skewers, followed by the cherry tomatoes, cucumber slices, red onion, olives, and feta (if using). Repeat the layers as necessary, finishing with a bit of fresh basil or parsley on top.
- Drizzle with Dressing: Once all the skewers are assembled, drizzle the dressing over them. You can also serve the dressing on the side for dipping.
Serve and Enjoy
- Serve Immediately: These skewers are perfect for serving right away. They can be a fun addition to any spread or a main dish for a lighter meal.
- Chill for Later: If you’re prepping ahead, refrigerate the skewers for about 30 minutes before serving to let the flavors meld.
