For the Skewers:

  • 8 oz short pasta (rotini, farfalle, or penne work best)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup black olives, pitted and halved
  • 1/4 cup feta cheese, cubed (optional)
  • 1/4 cup fresh basil or parsley, chopped
  • 810 skewers (wooden or metal)

For the Dressing:

  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey (optional)
  • Salt and pepper to taste

Instructions

Cook the Pasta

  1. Boil the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions, usually around 10 minutes for al dente. Drain and rinse under cold water to cool the pasta quickly.
  2. Set Aside to Drain: Once the pasta is cool, set it aside to drain completely.

Prepare the Veggies and Other Ingredients

  1. Slice the Veggies: While the pasta is cooking, halve the cherry tomatoes, slice the cucumber, and thinly slice the red onion. Cut the feta cheese into cubes if using.
  2. Chop Fresh Herbs: Roughly chop your basil or parsley for garnish.

Make the Dressing

  1. Mix the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, honey (if using), and a pinch of salt and pepper. Adjust the seasoning to taste.

Assemble the Skewers

  1. Build the Skewers: Start by threading the cooked pasta onto the skewers, followed by the cherry tomatoes, cucumber slices, red onion, olives, and feta (if using). Repeat the layers as necessary, finishing with a bit of fresh basil or parsley on top.
  2. Drizzle with Dressing: Once all the skewers are assembled, drizzle the dressing over them. You can also serve the dressing on the side for dipping.
